American Style Pancakes

Ingredients
3 Large Eggs, separated
1 Mug Self Raising Flour
1 Mug Full Fat Milk
1 knob Unsalted Butter, Melted
Pinch of Salt
Whisk the egg whites until just stiff.
In a separate bowl, mix the flour, milk, yolks, butter and salt.
Using a large metal spoon, fold in the egg whites, one third at a time.
I cook mine on a cast iron griddle slab, which is perfect for pizzas and pancakes as it gets really really hot. If you don't have one, use a standard pan, heat up a little oil and butter and ladle the thick batter in. Once you see bubbles on the top of the pancake, its time to flip them over. They should take around a minute or so per pancake.
Cook the whole batch and then layer up with crispy, smoked bacon and lashings of maple syrup!
